The simplest drink here has two ingredients and one ratio: one-third ODE, two-thirds tonic. The most elaborate requires a shaker and four minutes. Everything else is somewhere in between.

No recipe calls for equipment that can't be replaced by something from your kitchen.

WINE INSTEAD OF SPIRITS

Classic aperitif drinks are spirit-based. ODE is wine-based. This lowers the alcohol in the glass and shifts the taste: less sharpness, more citrus and herbs. We re-interpret the classics on this basis. What remains is the drink. The feeling of infinite lightness. What is omitted is the punch.
